Evelyn Hill, the catering firm recently hired by the National Park Service to manage foodservice at Ellis Island, has launched an ambitious ethnic cuisine program at the famous immigration site in New York harbor, reports Crain’s New York business. Meanwhile, another local caterer, Great Performances, recently landed another high-profile New York catering contract, taking over the previously self-operated dining operations at the landmark Apollo Theater on W. 125th Street, Crains reports.

Evelyn Hill's Ellis Island menus seek to honor the different ethnic groups that passed through the center. Asian cuisine will be featured through February 15 followed by Irish and Polish dishes in March and April. The small local caterer had won the 10-year Ellis Island contract in December, beating out large national catering firms like previous contract holder Aramark.
