Healthy Luby's Onsite Menu Migrates to its Commercial Division

The commercial cafeteria division of Luby's has adopted its onsite foodservice counterpart's Livin'Smart healthy dining menu in order to satisfy customers looking for more nutritious choices. The menu was developed in late 2009 as part of a specialty wellness initiative for the company's Luby's Culinary Services contract foodservice division, which operates in the healthcare, higher education and corporate dining segments.

Livin'Smart now encompasses more than 60 different dishes, each with less than 600 calories, including Shrimp & Crawfish Jambalaya, Cuban Grilled Tilapia, Chicken Piccata, Mushroom Turkey Chopped Steak, Almond Rice, Lemon Roasted Asparagus and Squash Saute.

A minimum of five Livin'Smart entrees with qualifying sides are currently in daily rotation at locations throughout Texas, Oklahoma and Arkansas. Nutritional information encompassing calorie, fat, carbohydrate and fiber data on each dish is posted on the Luby's website.

"It is becoming increasingly evident that restaurants need to play a more active role in offering guests access to healthier dining options, and with Livin'Smart, we have been able to do just that, ultimately enhancing the experience for our customers," says Luby's COO Peter Tropoli.
