Mass General, which serves 23,000 meals and snacks daily and touts a BeFit food packaging program, concluded a study in July revealing that labeling items in a hospital cafeteria with simple “traffic-light” symbols indicating their relative health value proved instrumental in reducing the calories in employees’ food purchases over a two-year period. Green labels depicted the healthiest foods, yellow the less healthy and red the least healthy. Through the study, which tracked the purchases of more than 5,000 employees buying food at Mass General cafeterias, researchers found that the proportion of green-labeled food purchased increased, while the proportion of the least healthy food purchased dropped.
