These sweet potato chips are a healthier—and more colorful—alternative to traditional potato chips or french fries. 

Ingredients

10 fresh sweet potatoes
Olive oil
Salt
Pepper

Steps

  1. Slice potato on slicer, not too thin but not too thick. Soak in water overnight.

  2. Drain potatoes and pat dry. Coat in olive oil, salt and pepper. Spray parchment-lined sheet pan; line potatoes on pan as close together as possible. Spray another sheet of parchment paper, place on top of potatoes and place sheet pan on top.

  3. Cook in 250°F oven for 1 hour. Flip pans over keeping together and cook for 1 hour more. Remove from oven and flip pans back over. Remove top pan and top parchment paper. Let sit overnight before serving.
