These portable cereal bars—packed with fiber-filled ingredients like oats, bananas and pears—make the perfect on-the-go second breakfast or midday snack. For an even healthier alternative, opt for overripe bananas to add sweetness instead of brown sugar. 

Ingredients

2 med. bananas, peeled
1 cup diced canned pears (7 oz.)
2/3 cup brown sugar
2 eggs
2 tbsp. ground cinnamon
2 tsp. vanilla extract
3 1/2 cups quick-cooking oats
1 1/4 cup skim milk

 

Steps

1. Preheat oven to 350 F. Line half sheet pan with parchment paper or nonstick mat.
2. In large bowl, combine bananas, pears, brown sugar, eggs, cinnamon and vanilla. Mash ingredients together.
3. Add oats and milk. Mix to combine.
4. Spread mixture on prepared sheet pan and smooth surface. Bake about 20 minutes, until lightly browned and firm to touch.
5. Let cool completely. When ready to serve, cut into 3 by 7-inch bars.
