Golden brown breadsticks encrusted with parmesan cheese are a versatile treat. They can be served with soup or salad or make a welcome addition to any bread basket.

Ingredients

4 oz. warm water
1 tbsp. fresh yeast
5 1⁄2 cups high gluten bread flour
1 3⁄4 cups cold water
1⁄4 cup sourdough starter
2 cups parmesan cheese, grated
1 tbsp. soft butter
2 tbsp. cayenne pepper
Olive oil, as needed
2 tbsp. kosher salt
 

Steps

1. In a bowl, combine warm water and yeast. Sprinkle with a pinch of sugar; let stand 15 min.

2. In a large bowl, combine flour and a pinch of salt. Add yeast mixture, water and starter; knead 5 min. Add 1⁄2 cup cheese, butter and 1 tbsp. each cayenne and oil; knead until smooth. Let dough rise 1 hr.

3. Combine remaining cheese, cayenne and kosher salt.

4. Form breadsticks; lay on an oiled pan, brush with oil and sprinkle with cheese mixture. Bake in a 350° F. oven 20 min.
