Nachos are a favorite appetizer. The chorizo topping on these nachos has just the right amount of heat. Plenty of melted cheese makes them fun to eat.

Ingredients

2 oz. crumbled chorizo
2 scallions, chopped
1 jalapeño, seeded and minced
10 oz. tortilla chips
4 oz. manchego or Monterey Jack cheese, shredded
4 oz. cheddar cheese, shredded
1 cup cooked black beans, well drained
1 tomato, seeded and chopped
 

Steps

1. In medium skillet, sauté chorizo with scallions and jalapeño until chorizo is cooked through.

2. Arrange chips in one layer in shallow, ovenproof dish. Spoon half the chorizo mixture over chips; sprinkle cheeses on top. Run under broiler to melt cheese.

3. Spoon remaining chorizo mixture, black beans, and tomato on top of melted cheese. Serve immediately.
