This whole wheat bread is sweetened with honey and made nutty with walnuts. The tender loaf makes great sandwiches or is a tasty addition to a bread basket.

Ingredients

1 oz. fresh yeast or 2 tbsp. dry yeast
4 cups warm water
2 eggs
1⁄4 cup molasses
1⁄4 cup honey
1⁄3 cup olive oil
1 1⁄2 tbsp. salt
1 1⁄2 cups walnuts, coarsely chopped
1⁄3 cup millet
6 cups stone ground wheat flour
2-3 cups bread flour
 

Steps

  1. Dissolve yeast in 1 cup warm water. In a large bowl, combine eggs, molasses, honey, oil, salt and remaining water. Add nuts, millet, wheat flour and yeast mixture. Stir until well blended.

  2. Add enough bread flour to make a workable dough. Knead 10-12 min., adding flour as needed to prevent sticking. Coat the dough with oil and allow to rise for 1-11⁄2 hr., until doubled in size.

  3. Shape into 2-3 loaves and place on a greased sheet pan. Let rise again approx. 30-45 min. Slit top of loaves, spray with water, sprinkle with flour and bake in a 350° F. oven for 40-50 min.
