Add a slightly sweet flavor to wheat bread by incorporating malt syrup.

Ingredients

2 lb. 5 oz. water
3 1/4 oz. cake yeast
5 oz. high gluten bread flour
1 lb. 15 oz. whole wheat flour
1 tbsp. 2 1/4 tsp. canola oil
3/4 oz. malt syrup
1 tbsp. 2 1/4 tsp. salt

Steps

  1. Add all ingredients, in order, to mixing bowl.

  2. Mix with dough hook for 8 to 10 minutes, until dough is soft and pliable (may have to add more flour to bowl as it mixes).

  3. Remove from mixer and put on workbench. Tri-fold the dough. Allow to rest, covered for 30 minutes.

  4. Cut into 1 pound, 4 ounce pieces. Round, cover and rest another 20 minutes.

  5. Shape and proof for 30 minutes, or until double in size.

  6. Score each loaf. Bake at 380°F/60 second steam for 10 minutes.

  7. Open door to release steam. Lower temperature to 370°F. Bake additional 10 to 15 minutes, or until done.
