This focaccia, topped with a delightfully sweet and spicy tomato sauce would work well as an appetizer or in a bread basket.

 

Ingredients

1 1⁄2 cups tomato sauce
1 cup honey
1 cup onion, chopped
1⁄3 cup tomato paste
3 tbsp. red wine vinegar
1 tbsp. dijon mustard
1⁄2 tbsp. garlic, finely chopped
1⁄8 tsp. cayenne pepper
4 lb. bread dough
 

Steps

1. In a saucepan, combine tomato sauce, honey, onion, tomato paste, vinegar, mustard and garlic. Boil; reduce heat and simmer 15 min., stirring. Add cayenne; reserve.

2. Shape bread dough to fit oiled sheet pan; press into pan. Dimple dough every 2-in. or so with fingertips.

3. Spread sauce over dough. Bake at 500° F. 10-15 min. until lightly browned. Cool slightly; cut into squares.
