Chef Williams developed this recipe as a healthy snack option for students at this independent school. Ingredients such as chia seeds, oatmeal, wheat germ and dried fruit pack the bars with nutrients. Plus, the granola is made with honey that is cultivated and collected on the school’s campus.
Ingredients
11 cups old-fashioned oats
3 cups sunflower seeds
1/2 cup wheat germ
1-2 tbsp. ground cinnamon, to taste
2 tsp. ground nutmeg
1/2 cup safflower oil
6 cups honey
1 1/2 cups toasted soy butter or peanut butter
1/2 cup chia seeds
1/2 cup flax seeds
2 tbsp. vanilla
4 cups dried fruit (raisins, cranberries, blueberries, cherries, apricots)
Steps
1. Preheat oven to 300 F. In large bowl, toss oats, sunflower seeds and wheat germ. Add cinnamon and nutmeg; toss again. Stir in oil until well blended.
2. Spread mixture on two large sheet trays. Bake until golden, about 15 minutes.
3. In medium saucepan, heat honey very gently. Stir in soy or peanut butter until well blended. Stir in chia seeds, flax seeds and vanilla.
4. Remove toasted oat mixture from oven; pour warm honey mixture over oats and stir together to coat well.
5. Press mixture firmly into well-greased hotel plans; return to oven on low fan for 25 minutes.
6. Cool completely before cutting into bars.
