Packing the goodness of a bowl of oatmeal into an easy-to-tote bar makes for a nutritious breakfast on the go. As a bonus, this breakfast bar is gluten-free, made with oats, walnut flour, chia seeds, bran cereal and figs.

Ingredients

Nonstick cooking spray
1 cup quick-cooking oats
1 cup bran cereal
1/4 cup walnut flour
1 1/4 cups walnuts, chopped
1/3 cup chia seeds, ground
1 cup fresh figs, stemmed and coarsely chopped
1/2 cup dry nonfat milk
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 cup honey
2 eggs

Steps

  1. Preheat oven to 350 F. Spray 9-by-13-inch baking pan with nonstick cooking spray.

  2. In food processor, combine oats, bran cereal, walnut flour, walnuts, chia seeds, figs, dry milk, cinnamon and ginger; process until coarsely chopped. Add honey and eggs; pulse until blended.

  3. Transfer mixture to prepared pan; press down firmly. Bake 20 minutes in middle of oven. Let cool in pan 15 minutes.

  4. Remove from pan; cut into bars.
