A variation of a popular appetizer these cheddar and ricotta cheese sticks breaded with panko and fried will be a welcome addition to any appetizer selection. Serve with fruit chutney for dipping.

Ingredients

3 cups grated cheddar cheese
1 1⁄2 cups ricotta cheese
Salt, pepper, and cayenne, to taste
3 cups panko (Japanese bread crumbs)
1 cup flour
1 cup milk
2 eggs, beaten
Vegetable oil, for frying
Fruit chutney, for dipping
 

Steps

  1. Puree cheeses in food processor until smooth; season with salt, pepper, and cayenne.

  2. On separate trays, place panko and flour. Blend milk with eggs in a mixing bowl.

  3. Form cheese mixture into 4-in. logs and coat with flour. Dip in egg mixture, then coat with panko. Arrange logs on sheet pan; cover and chill.

  4. Heat oil in deep fryer to 350°F. Fry logs in batches in hot oil until golden, 1-2 min. per batch. Drain on paper towels.

  5. Serve with chutney.
