Cupcakes are popular treat today and these sweet banana and vanilla cupcakes topped with a cream cheese frosting are delicious.

Ingredients

Cupcakes:
2 1⁄4 cups flour
3⁄4 tsp. baking soda
1⁄2 tsp. baking powder
1⁄2 tsp. salt
1 cup mashed bananas (2 large)
1⁄4 cup buttermilk
1 tsp. vanilla extract
1⁄2 cup butter (4 oz.)
1 1⁄3 cups sugar
2 large eggs

Frosting:
16 oz. cream cheese
1 cup butter (8 oz.)
2 tsp. vanilla extract
1⁄2 tsp. ground cardamom
1 1⁄2 cups powdered sugar
2 bananas, peeled and sliced

Steps

1. Line 18 large muffin cups with paper liners.

2. Prepare Cupcakes: Combine flour, baking soda, baking powder, and salt in large bowl. Mix mashed bananas, buttermilk, and vanilla in another bowl. In bowl of electric mixer, beat butter and sugar until light. Add eggs, one at a time, until blended. Alternately add flour mixture and banana mixture in 3 additions, beating well after each.

3. Divide batter among muffin cups. Bake at 350°F for 15-20 min. or until tester comes out clean. Cool before frosting.

4. Prepare Frosting: Beat cream cheese and butter until fluffy. Beat in vanilla and
cardamom. Gradually beat in powdered sugar. Frost cupcakes; arrange 2 banana slices on each.
