Chef David Guas of Bayou Bakery in Virginia updates the BLT sandwich with more complex flavor. Candied bacon, which is trending on menus now, takes on a sweet-smoky-savory profile with an application of honey during cooking. The mayo is spiked with Dijon mustard and potato rolls create an upgraded carrier.

Ingredients

2 tbsp. plus 1 tsp. honey

1 tsp. hot water

8 strips bacon

¼ cup mayonnaise

1 tsp. Dijon mustard

4 to 8 leaves butter lettuce or romaine

4 long potato rolls

Steps

1. Preheat oven to 350 F. In small bowl, mix 2 tablespoons honey with hot water until blended.

2. Lay bacon on baking sheet in one layer; place in oven for 10 minutes. Drain off fat and brush bacon with honey mixture. Bake 5 to 6 minutes longer until crispy.

3. In another small bowl, mix mayonnaise, mustard and 1 teaspoon honey.

4. For each sandwich, split roll horizontally in half; spread both cut sides with mayonnaise mixture. Place 1 to 2 lettuce leaves on bottom of roll; top with 2 bacon strips. Complete sandwich with top of roll.
