Unusual skewered slider pop-up wows at Zappos

A slider on a skewer? No one saw that coming. “The key to pop-ups is the unexpected,” says Daniel Concepcion, executive chef with Compass Group at the Zappos corporate headquarters in Las Vegas. “Everyone loves a taco or a barbecue pop-up, and that’s cool, but variety in selection is really important.”

With that in mind, the Get Skewered pop-up was born. Customers built their own sliders, added side dishes and placed it all on wooden skewers that were preloaded with even more fun items. At the one-day lunchtime event, about 200 customers “got skewered,” a testament to the power of unexpected pop-ups.
