Kids' Wrap to Go on Lunch Menu

A group of students from Atholton High School in Columbia, MD, have developed a spicy buffalo chicken wrap that will become part of the school lunch menu in the Howard County system this fall, reports the Baltimore Sun. The six students, all from a culinary class at the high school, won the honor by winning a recipe contest and then a taste competition, all part of an initiative by the school system to find meal choices that will appeal to students.
In the recipe contest, the students had to develop an item that would not only appeal to their fellow students but would also meet nutrition and cost criteria: no more than 750 calories or 30 percent of the calories from fat, and a food cost of no more than $1.22. Classes in five of Howard County's 12 high schools participated in the competition, with submissions ranging from sandwich wraps and pizza bagels to baked sweet potato wedges.
The Atholton students’ chicken wrap uses oven-baked chicken and a whole-wheat tortilla, light ranch dressing, cheddar cheese and lemon juice to cool the spicy hot sauce.
