Foodservice phrase to know: Nutrigenomics

At a Southern California health system, nutrigenomics has played a role in menu development.

At Sharp HealthCare in Southern California, the nutrition team decided to incorporate nutrigenomics when designing the menu for its latest food station, Nourish.

"Simply put, nutrigenomics is the science of how foods 'talk' to our genes, informing us which foods work with which genes to ensure our best health," says Lauren Blacker, district manager for Sodexo Food and Nutrition Services at Sharp HealthCare.

The Nourish menu is filled with dishes such as wild salmon escabeche salad and vegetarian moqueca (a Brazilian fish stew) that are supposed to help consumers fight inflammation and reduce oxidative stress.
