Watermelon, kalamata olives, chopped mint and crumbled feta cheese combine to make a sweet salad with a hint of savory.

Ingredients

1 7-to-8 lb. seedless watermelon, chilled
1⁄2 cup extra virgin olive oil
3 tbsp. lime juice
1⁄2 tsp. salt
3⁄4 tsp. cracked black pepper
1⁄4 cup pitted sliced kalamata olives
1 cup chopped mint
11⁄2 cups crumbled feta cheese 

Steps

1. Remove rind from watermelon and cut it into 1-in. cubes. Put watermelon into colander to drain.

2. In small bowl, combine olive oil, lime juice, salt and pepper. Whisk and hold.

3. In large salad bowl, mix watermelon cubes, kalamata olive slices, mint and lime dressing. Toss gently to evenly combine ingredients.

4. Add feta cheese, toss lightly until evenly distributed.

Note: For best results, prepare salad just before serving, so watermelon retains fresh crisp texture and sweetness.
