This turkey salad wrap is made in the style of chicken salad. LDS Hospital takes roasted turkey, light mayo, grapes and nuts and mixes them with curry powder, salt and pepper and serves it in a wrap. 

Ingredients

1 lb. cooked turkey breast
1/2 cup grapes
1/4 cup walnuts
1/2 red onion
1/2 celery stalk
1 tsp. curry powder
1 tsp. lemon juice
1/2 cup mayonnaise
2 1/2 tsp. parsley
2 whole-wheat torillas
1 cup mixed greens
1/2 tomato
 

Steps

  1. Dice cooked turkey into 1/4-by 1/4-inch dice.

  2. Slice grapes in half and give walnuts and parsley a rough chop.

  3. Mix all of ingredients together in bowl except for mixed greens, tomato and tortilla.

  4. Place half a cup of mixed greens on each tortilla. Slice tomatoes and place two slices on each wrap. Place one cup of turkey salad on each wrap.

  5. To roll, fold sides of wrap in, then fold side of wrap facing toward you over salad and continue to roll until wrap is closed.

  6. Cut wrap in half on bias.
