Ingredients

4 oz. cooked ramen, udon or soba noodles
1 oz. greens; watercress, bok choy, spinach, sweet potato leaves
1 tbsp. chopped fresh cilantro
1 tbsp. chopped scallions

Guest choice of

Hot sauces
Hard cooked eggs
Nori flakes
Water chestnuts
Bamboo shoots
Fresh mung bean sprouts
Carrots
Sliced chicken
Sliced flank steak

Steps

  1. Combine miso paste with hot water according to package directions.

  2. Dip noodles and greens in boiling water for 20 seconds to heat through. Shake to drain well and place in serving bowl

  3. Pour broth over and top with cilantro and scallions.

  4. Guests serve their favorite choices of toppings.
