Vegan Mango Quinoa Salad

Fresh mango and honey add a sweet note to this otherwise savory quinoa salad. It would make a great addition to a vegan or vegetarian station.

Ingredients

Salad:

16 cups quinoa, cooked
2 tsp. salt
8 each mango, peeled and chopped
2 cups blanched slivered or sliced almonds
16 tbsp. roasted pumpkin seeds
8 medium cucumber, peeled and diced

Dressing:

16 tbsp. olive oil
2 tsp. turmeric
1 each lime, juiced
16 tbsp. chopped fresh cilantro
Salt and freshly ground black pepper
4 oz. honey
 

Steps

  1. Add cucumber to mango along with almonds and pumpkin seeds.

  2. Heat 1 teaspoon oil in a small pan and fry with turmeric for 30 seconds, then let cool.

  3. Add lime juice, cilantro, salt and pepper to oil and turmeric. Mix with a whisk or fork.

  4. Add cooled quinoa to mango mixture, pour dressing over salad, and toss.

  5. Serve immediately or cover and chill.
