This warm and toasty sandwich is a delightful combination of sliced pork and mushrooms. Topped with melted cheese and arugula, it is hearty and delicious.

Ingredients

1 tbsp. olive oil
1⁄2 cup white mushrooms, sliced
Salt and pepper, as needed
4 oz. roasted pork loin, sliced
1 ciabatta (or sourdough) roll
2 oz. fontina cheese, sliced
1⁄2 cup arugula
Truffle oil (optional)
 

Steps

1. In a small sauté pan, heat oil until hot, but not smoking. Add mushrooms and cook until nicely browned, about 4 min. Season with salt and pepper. Set aside.

2. Cut ciabatta in half. Cover one half with pork slices and top with mushrooms.

3. Cover mushrooms evenly with cheese and place in oven. Place top half of bread next to sandwich. Warm sandwich until completely heated through and cheese is melted.

4. Remove from oven, and top with arugula, and if desired, a drizzle of truffle oil. Cover sandwiches with top half of ciabatta and serve immediately.
