Sandwiches are the lunch of choice for the grab-and-go set—whether they’re eating in the car, in the office, on the street or in school. To keep customers from slipping into sandwich boredom, pump up the usual fillings with house-made condiments, like a quick-to-fix chipotle mayonnaise for turkey and other sliced meats.

Ingredients

1 canned chipotle pepper, minced
1/4 bunch cilantro, rinsed, drained and chopped
1 tsp. minced fresh garlic
1/2 cup mayonnaise
1 large lime, halved
Freshly ground black pepper, to taste
2 slices hearty sourdough bread
4 oz. oven roasted turkey breast, sliced
2 to 4 thin slices sweet onion
1 slice (1 oz.) pepperjack cheese
1/4 avocado, thinly sliced
1/2 Roma tomato, sliced
Red lettuce leaves, as needed

Steps

  1. In small bowl, combine chipotle, cilantro and garlic; stir in mayonnaise.

  2. Squeeze 1/2 the lime into mixture. Add pepper to taste.

  3. Per order: spread 1 tbsp. chipotle mayo on each bread slice. Top 1 bread slice with roasted turkey. Place thinly sliced red onions and pepperjack cheese on the second bread slice.

  4. Broil both halves in preheated oven or salamander broiler to melt the cheese and heat the turkey. Remove from oven; place slices of avocado on top of the melted cheese. Layer tomatoes and lettuce on top. Assemble sandwich and slice on the diagonal.
