Guests create their own salad without leaving the table. Obviously the options can be changed based on cuisine, region, season, etc. Lime vinaigrette dressing recipe included.

Ingredients

2 cups assorted salad greens
1 tbsp. each ­­assorted toppers:
Cut-up Carrots
Cut-up Celery
Cubed cheese
Cubed ham
Cherry tomatoes
Dried apricots
Dates
Cashew halves
Lime Vinaigrette (recipe follows)

Lime Vinaigrette: Whisk together 1⁄4 cup lime juice, 1 tsp. grated lime zest, 1 tsp. minced shallot, 1⁄2 tsp. salt, pinch ground pepper, and pinch sugar. Slowly whisk in 1⁄2 cup olive oil until well blended. Use 1-2 tbsp. vinaigrette for each salad.
Yield: 3⁄4 cup.

Steps

1. Combine all ingredients except vinaigrette in mixing bowl. When ready to serve, toss with Lime Vinaigrette.
