A Vietnamese inspired chopped salad that is filled with great texture and flavor. This salad is a delight to the eye as well as the taste buds.

Ingredients

32 oz. pork shoulder
2 tsp. tamarind paste
1 tsp. honey
1 tbsp. Vietnamese fish sauce
1 tsp. garlic, crushed
1 tbsp. green onions, minced
1 tsp. fresh minced ginger
1 lb. long beans, trimmed
2 tbsp. peanut oil
2 carrots, peeled and grated
1 seedless cucumber, sliced
4 scallions, sliced on bias
Mixed greens, as needed
Cilantro sprigs, as needed
Lemon grass Dressing
1 stalk lemon grass, minced
1 clove garlic
1⁄4 cup red wine vinegar
1⁄2 cup vegetable oil
1⁄2 cup mayonnaise
 

Steps

1. Combine first seven ingredients; marinate 30 min. Heat oil in a wok; stir-fry beans. Remove pork from marinade; grill; slice.

2. Puree first four dressing ingredients in food processor; fold in mayonnaise and reserve.

3. Arrange grilled pork, long beans, and fresh vegetables over greens. Top with dressing and garnish with cilantro.
