Boiled soybeans are pureed into the guacamole of this vegetarian dish. Mushrooms, muenster cheese and sprouts finish out the wrap.

Ingredients

32 oz. soy beans
Salt, to taste
1 avocado
1 large red onion, thinly sliced
2 cloves garlic, minced
1⁄4 cup fresh cilantro, chopped
Hot sauce, to taste
Salt and pepper, to taste
1 red onion, shaved
8 oz. mushrooms, sautéed
8 slices muenster cheese
1 cup sprouts (sunflower, pea, etc.)
8 rounds of flatbread

Steps

1. Boil soybeans in salted water until tender; refresh in cold water. Drain beans and puree with avocado, onion, garlic, and cilantro. Season to taste with hot sauce, salt, and freshly ground black pepper.

2. Top flatbreads with equal portions puree, red onions, mushrooms, cheese, and sprouts.
