A traditional salad gets a makeover. Southwestern flavorings perk up this composed salad. The orange salsa dressing adds a refreshing bite to this crunchy salad.

Ingredients

6 cups iceberg lettuce (about 1⁄2 large head) cut into 1-in. chunks
1 1⁄2 cups sliced radishes
3 hard-cooked eggs, cut into wedges
1 can (16-oz.) red kidney beans, rinsed and drained
1 can (7-oz.) corn kernels
1 cup Monterey Jack cheese, cut into 1⁄2-in. cubes
1⁄2 cup crumbled bacon or bacon bits
1⁄2 cup sliced scallions, with tops
Orange Salsa Dressing (recipe follows)

Orange Salsa Dressing:
1 cup prepared salsa
1⁄2 cup orange juice
2 tbsp. cider vinegar
1 tsp. grated orange peel (optional)

Steps

1. In a large mixing bowl, combine all ingredients except dressing. When ready to serve, toss with Orange Salsa Dressing.

Orange Salsa Dressing:

Combine all ingredients until well blended.
