Lime, cilantro and agave add Southwest flair to this fruit-and-grain salad.

Ingredients

3 cups water
1-1/2 cups cooked Farro
2 cups halved red seedless grapes
2 cups halved green seedless grapes
4 apples diced, skinned and seeded  (gala or pink lady)
1/2 cup roasted almonds
1/2 cup dried cranberries
1/2 cup of diced jicama

Dressing

2 cups Greek yogurt
2 1/2 tbsp. agave nectar 
Juice of 1 lime
2 tbsp. chopped cilantro
1/2 tsp. kosher salt

Steps

  1. Cook farro in water according to package directions. Cool.

  2. Combine farro, fruit, almonds, cranberries and jicama.

  3. Combine ingredients for dressing. Toss with salad. Serve.
