This simple potato salad gets its name and flavor from the Old bay seasoning Chef Aaron Rothgeb adds. And if you want to make it more upscale—and more New England-like, Rothgeb suggests tossing in a cup of cooked lobster meat.

Ingredients

2 lbs. diced redskin potatoes
1/2 lb. salted butter
1 rib celery, small dice
3.5 tsp. Old Bay seasoning
1/4 cup mayonnaise
1/2 tsp. yellow mustard
salt and pepper, to taste

Steps

  1. Steam potatoes and butter together until fork tender. Let cool.

  2. Combine potatoes with rest of ingredients. Taste and adjust seasonings as needed.
