Grilled Sausage and Cheddar Panini 2008

extra-large eggs

2 Tbsps.

whole milk

¼ tsp.

salt

¼ tsp.

pepper

2 Tbsps.

butter

(½ in. each) slices sourdough bread

sausage patties, cooked

slices white cheddar cheese

  1. In a large bowl beat eggs with milk, salt and pepper.

  2. Heat a nonstick skillet with butter. Add the eggs and scramble until firm throughout. Divide evenly into 4 servings.

  3. Assemble 4 slices of bread as follows: bread, 1 slice of cheddar, 2 sausage patties and scrambled eggs. Top each sandwich with a slice of cheddar and a remaining slice of bread.

  4. Spray a preheated panini grill or grill pan with nonstick spray. Grill sandwiches until the bread is toasted and the cheese melts. (If using a grill pan, weigh the sandwich down with a bacon press or cast-iron skillet.) Serve hot.
