Fruit and cheese—a classic combination—complement each other in this enticing salad.  It makes a refreshing alternative to the usual tomato-mozzarella combos seen on many menus.

Ingredients

24 pineapple slices, drained
4 heirloom tomatoes, sliced 1/4-in. thick
1 1/4 cups Italian herb vinaigrette
1 cup crumbled Gorgonzola cheese
Italian parsley, for garnish

Steps

  1. Grill pineapple slices; cool.

  2. Arrange tomatoes and pineapple slices on large platter, alternating the slices.

  3. Top with Gorgonzola cheese; sprinkle vinaigrette evenly over platter. Garnish with parsley.
