Sweet, salty and refreshing ingredients combine in this Asian “tapa” to create just the right balance of flavors. Textures are also well balanced, with crunchy peanuts contrasting with soft dumplings and creamy condiments. Although this recipe has several components, the dressing, relish and mustard can be made ahead.

Ingredients

Sweet Chili Dressing:
1/2 cup sweet chili sauce
2 tbsp. olive oil
1 tbsp. white soy sauce
1 tsp. fish sauce

Peanut Relish:
2 cups vegetable oil
1/2 cup peanuts
1/4 cup dried shrimp

Sesame Mustard:
1/4 cup Chinese mustard
1 cup hot water
1/4 cup tahini paste
1/4 cup rice wine vinegar
1 tsp. salt
1/2 tsp. sugar
1/2 cup blended oil
1 tsp. black and white sesame seeds

Grilled Chicken Dumplings:
1/2 lb. ground chicken (breast and thigh)
1 tbsp. shallots, diced small
1 tbsp. sliced scallion greens
1 tbsp. cilantro, chopped
1 tsp. chopped ginger
1 egg white
2 tbsp. oyster sauce
1 tbsp. heavy cream
1 tsp. red chili flakes
1 tsp. potato starch
1 tsp. sesame oil
1 tsp. salt
1 tsp. fish sauce
1/2 tsp. ground white pepper

Salad:
30 pieces of shiso leaves
30 pieces of Bibb lettuce, trimmed with a ring cutter
1 lb. salad greens, chopped
1/2 cup mint, finely shredded

Steps

  1. Prepare Sweet Chili Dressing: Whisk together all ingredients; reserve.

  2. Prepare Peanut Relish: Heat oil to 375º F. in deep skillet or fryer. Fry peanuts and shrimp separately in hot oil until golden brown. Transfer to paper towels to drain. Season with salt. Roughly chop the peanuts and shrimp and mix together.

  3. Prepare Sesame Mustard: Whisk mustard with hot water; cover with plastic wrap and set aside for 2 min.

  4. Once mustard is ready, combine with tahini, rice vinegar, salt and sugar in a blender container. With blender running, slowly drizzle in the oils. Pour into a dish and garnish with toasted sesame seeds.

  5. Prepare Grilled Chicken Dumplings: Combine all ingredients for chicken dumplings. Form mixture into small, flat discs, about a quarter in size.

  6. Sear dumplings in a hot skillet on both sides until cooked through; keep warm.

  7. For each bite: Plate 1 shiso leaf on top of 1 Bibb lettuce piece; top with 1 chicken dumpling.

  8.  In small bowl, mix together the chopped greens and mint. Dress with Sweet Chili Dressing. Place about 1 tbsp. of this salad on top of the dumpling; garnish with Peanut Relish. Serve Sesame Mustard on the side.
