This recipe mixes tangy cheese with savory prosciutto—a far cry from the ordinary grilled cheese sandwich. A relish combining sweet peppers with spicy chili powder and cayenne adds just the right amount of complexity.
Ingredients
3 tbsp. olive oil
4 jars (7 oz. each), roasted red sweet peppers, drained, rinsed, patted dry, chopped
1 1/2 cups chopped onions
1 tbsp. finely chopped garlic
4 1/2 tbsp. cider vinegar
3 tbsp. sugar
1/4 tsp. dry mustard
1/4 tsp. cayenne pepper
1/4 tsp. salt
8 slices focaccia bread
8 oz. taleggio cheese, sliced
12 slices Prosciutto di Parma
Steps
To make the relish, heat oil in a large skillet over medium-high heat. Add red peppers; stir constantly for 2 minutes. Add onions and garlic. Stir frequently until softened, about 5 minutes.
In small bowl, dissolve sugar into vinegar. Add to red pepper mixture along with mustard, cayenne and salt. Stir constantly for 6 minutes, until all liquid has evaporated. Remove from heat and cool to room temperature.
Layer 4 slices focaccia with cheese and prosciutto. Spread remaining 4 slices with 1 tbsp. relish; place on top of prosciutto to form sandwiches.
Place sandwiches on panini maker; press until cheese melts and bread is toasted.
