Slices of freshly grilled vegetables such as zucchini and red peppers are layered with crumbly goat cheese, then seasoned with olive tapenade between puff pastry triangles.
Ingredients
1⁄2 lb. puff pastry
Egg wash
2-3 zucchini, sliced lengthwise
2-3 red bell peppers, seeded and halved
Olive oil
2 tsp. minced fresh thyme
12-16 oz. soft goat cheese
1 cup black olive tapenade
Microgreens, for garnish
Steps
Roll out pastry and cut into 3-in. triangles. Transfer to baking sheet and brush tops with egg wash. Bake in 400°F oven 12-15 min., until golden; cool.
Meanwhile, brush zucchini and red peppers with olive oil and sprinkle with thyme. Grill until tender. Peel peppers and cut into wide strips; cut zucchini slices crosswise in half.
Split pastry triangles and remove some of soft center. To construct a Napoleon, spread one triangle with goat cheese; top with tapenade and a layer of grilled vegetables. Repeat layers with a second pastry triangle, cheese, tapenade, and vegetables; top with a third triangle. Garnish plate with microgreens.
