A favorite sandwich done well. Celery seed, mustard and scallions brighten the taste in this traditional presentation of a club sandwich.

Ingredients

3 slices whole wheat bread, toasted
2 hard-cooked eggs, chopped
1 tbsp. chopped scallions
1 tsp. grainy mustard
1⁄4 tsp. celery seed
1-2 tbsp. mayonnaise
Green-leaf lettuce, as needed
Fresh tomato slices, as needed
3 slices thick bacon, cooked and cut to fit bread if necessary
 

Steps

For egg salad, mix eggs, scallions, mustard, celery seed, and enough mayonnaise to moisten in small bowl. To assemble, top first slice of toast with lettuce, tomato, and bacon. Top with second slice of toast and egg salad. Close sandwich with third slice of toast, and serve.
