Apricots, cherries, raisins and honey take quinoa on a sweet retreat in this versatile quinoa side dish.

Ingredients

1 gal. vegetable stock 
2 qt. raw quinoa
2 cups dried apricots
2 cups dried cherries
2 cups raisins
2 cups extra-virgin olive oil
1 1/2 cups honey
1 oz. kosher salt
1/2 cup balsamic vinegar
Pitted dates for topping (1 for each portion)

Steps

  1. Bring vegetable stock to boil; add quinoa. Reduce heat and simmer for 20 minutes. Remove from heat and let cool.

  2. Add apricots, cherries, raisins, olive oil, honey salt and balsamic vinegar to cooled quinoa; mix well.

  3. Top each portion with a pitted date; serve.
