A classic, this grown up grilled cheese sandwich is served golden brown and crisp. A salad on the side makes it a complete meal.

Ingredients

16 slices white bread (pain de mie)
Butter, as needed
French-style mustard, as needed
8 slices Black Forest ham
1⁄2 lb. Gruyère cheese, grated
 

Steps

  1. Spread eight pieces of bread with butter and mustard.

  2. Place one slice of ham over each piece and cover with remaining slices of bread. Spread with more butter and pan-fry on one side. (Note: the sandwich can alternatively be dipped in an egg batter before it’s pan-fried, if desired.)

  3. Remove sandwiches from skillet, flip, and cover the uncooked side of each sandwich with Gruyère.

  4. Place sandwiches under broiler and grill until cheese is brown and bubbling. Serve with crisp green salad and cornichons, if desired.
