Ingredients

1 1/2 lb. mixed salad greens
1 1/2 cup julienned red onions
3/4 cup dried cranberries
3/4 cup candied walnuts
1 1/2 cup diced Roma tomatoes
1 1/2 cup diced avocado
6 oz. crumbled blue cheese
6 grilled chicken breasts, sliced on bias
12 oz. Champagne Vinaigrette (recipe follows)

Champagne Vinaigrette
Yield: Six servings

6 tbsp. champagne vinegar
1 1/2 tbsp. honey
2 tsp. minced shallots
3/4 tsp. Dijon mustard
1/4 tsp. minced garlic
1 egg yolk
1 tbsp. chopped fresh basil
3/4 cup extra-virgin olive oil
Kosher salt to taste
Fresh ground black pepper to taste

Steps

  1. For each salad, place 4 ounces salad greens on a plate. Top with ¼ cup onions, 2 tablespoons cranberries, 2 tablespoons candied walnuts, ¼ cup tomato, ¼ cup avocado, 2 tablespoons blue cheese, 1 sliced chicken breast and 2 ounces Champagne vinaigrette.

Champagne Vinaigrette

  1. Whisk vinegar, honey, shallots, mustard, garlic, egg and basil.

  2. Using immersion blender, add olive oil in slow, steady stream. Season with salt and pepper to taste.
