A chilled noodle salad with lentils is a refreshing and tasty start to a meal. The Asian dressing makes it full of flavor.

Ingredients

1 cup USA lentils, rinsed
2 cups water
1⁄3 cup seasoned rice vinegar
2 tbsp. peanut oil
2 tbsp. soy sauce
1 tbsp. grated fresh ginger
1 tbsp. sesame oil
1 clove garlic, minced
6 oz. cooked linguine
2 qt. boiling water
3⁄4 cup chopped green onions
1 cup sliced water chestnuts
1 cup fresh or thawed frozen peas
1⁄4 cup cilantro, chopped
 

Steps

1. Place lentils in medium saucepan with water; bring to boil. Reduce heat, cover, and simmer 10-12 min., or until lentils are barely tender. Drain, if necessary, and place in medium bowl.

2. Combine vinegar, peanut oil, soy sauce, ginger, sesame oil, and garlic. Pour over lentils. Cover and chill. Combine with linguine and remaining ingredients. Chill several hours to blend flavors.
