Delicious grapes shine in this handy, kid-friendly version of a chicken salad sandwich. Serve with sides as a kids' meal, or as a bite-sized healthy plate option at the bar.

Ingredients

3 whole chickens roasted (5-7 lb. each before cooking), light and dark meat pulled and coarsely chopped
5 stalks celery, diced
1 red onion, diced
3 cups red seedless grapes, halved
3 1/3 oz. chopped walnuts
1 cup sour cream
1/2 cup Dijon mustard
1 tbsp. salt
1 tsp. pepper
12 flour tortillas

Steps

  1. Combine celery, onion, grapes, and walnuts with sour cream, mustard salt and pepper: mix thoroughly. Add roasted chicken and toss lightly.

  2. Spread 6 oz. of chicken salad on each tortilla and roll up into a wrap. Cut in half to serve.

  3. For service, plate one-half of a wrap with a small bunch of grapes, a beverage and veggies with dip.
