Lil Gem lettuce, a cross between romaine and butter lettuce, has leaves just right for holding a variety of fillings. Here, chef Hunter candies smoky bacon in maple syrup and brown sugar, then tucks it into the fresh lettuce leaves with ripe Roma tomatoes and avocados topped with lemon-garlic aioli. It’s the ultimate in portability—just roll up and take a bite.

Ingredients

1 lb. thick-sliced bacon
1/2 cup maple syrup
2 tbsp. brown sugar
1 tbsp. chipotle in adobo puree
1/2 cup mayonnaise
1 clove garlic, minced
2 tbsp. lemon juice
1 tbsp. grated lemon zest
1 tsp. sugar
2 heads Lil Gem lettuce, rinsed, separated into cups and patted dry
2 Roma tomatoes, seeded and diced
1 cup peeled and diced avocado
1 cup peeled and diced English cucumber

Steps

  1. Arrange bacon slices on rack on sheet pan.  Bake at 350°F until beginning to brown. 

  2. Combine maple syrup, brown sugar and chipotle puree. Brush mixture over bacon slices and bake 2 to 3 min.  Turn slices, brush with maple mixture and bake another 2 to 3 min. Continue turning and brushing slices with maple mixture until candied, about 8 to 12 min. total. Let cool on rack. Cut into ½-in. strips.

  3. In small bowl, whisk mayonnaise, garlic, lemon juice, lemon zest and sugar.  Divide tomatoes, bacon strips, cucumbers and avocado among 12 lettuce cups. Drizzle lemon mayonnaise over top.
