Honey is the flavor of the year, according to fragrance and flavor research firm Firmenich. Mixologists are realizing the potential of this buzz-worthy sweetener as they move toward more natural sweeteners for cocktails. Honey has distinct flavor profiles based on region, soil, climate and nectar type. In this garden-to-glass recipe, Chef Guas blends wildflower honey with jalapeño, grapefruit juice, fresh rosemary and rum, then serves the drink in mason jars for a casual vibe. 

Ingredients

2 cups wildflower honey
3/4 cup water
2 quarts grapefruit juice
8 mason jars
Ice cubes
1  bottle (750 ml.) dark rum
8 fresh rosemary sprigs
1 medium jalapeño pepper, thinly sliced

Steps

  1. Mix honey and water in a large container.

  2. Stir in grapefruit juice; cover and let stand 1 hour.

  3. For each serving, place ice in mason jar, so that it is 2/3 full. Add 1/4 cup rum; fill jar with grapefruit juice mixture.

  4. Pour into shaker; add 1 sprig rosemary and 1 jalapeño slice. Shake for 10 seconds; return drink to the jar. Add more ice, if desired.
