Avocado Soup – Hot or Cold

This simple soup recipe is a great dish for multiple seasons. It can be served hot or cold and features fresh avocados.

Ingredients

2 cups chicken broth
1 large Haas avocado, very ripe
1 cup heavy whipping cream
1/4 tsp. ground cumin
1/4 tsp. salt
1/8 tsp. white pepper
1/4 cup dry sherry
2 tbsp. fresh lemon juice

Steps

  1. Heat broth until hot, but not boiling. Set aside.

  2. Peel avocado and remove seed. Cut into several pieces, place in food processor or blender and purée. Turn off blender and pour in whipping cream and broth. Add cumin, salt, pepper, sherry and lemon juice. Pulse few times until mixture is just blended. Taste and add more salt and pepper, if desired.

  3. Serve immediately or chill for at least two hours before serving.
