Fresh tuna is seasoned and quickly seared to create a beat-the-heat salad that is light but satisfying. The salad features a mashup of global flavors, combining Cajun spice with wasabi dressing and Asian rice noodles.

Ingredients

6 oz. yellowfin or ahi tuna

1 tsp. Cajun seasoning

6 oz. dry Asian rice noodles

2 cups fresh spinach

½ cup mandarin orange segments

½ cup red, seedless grapes

2 tbsp. prepared cucumber wasabi dressing

Steps

  1. Sprinkle both sides of tuna with Cajun seasoning. In saute pan over medium heat, cook tuna on one side for 5 to 6 minutes; flip and cook on other side for 5 minutes, or until or desired doneness.

  2. Cook Asian rice noodles according to package directions; set aside.

  3. In medium bowl, toss spinach, oranges, grapes and noodles; transfer to serving plate or shallow bowl. Slice cooked tuna and fan over top of salad. Serve with cucumber wasabi dressing on the side.
