INGREDIENTS:4 ½ lbs. red delicious apples
3 lbs. cooked turkey, diced
3 cups celery, chopped
3 cups, canned crushed pineapple, drained
12 oz. low-fat lemon yogurt
12 oz. low-fat mayonnaise
1 ½ tsps. prepared mustard
½ tsp. celery seed
50 whole pita bread, halved
3 lbs. leaf lettuceDIRECTIONS:1. Core and chop unpeeled apples. In a large bowl combine with turkey, celery and pineapple.

2. For dressing: Combine yogurt, mayonnaise, mustard and celery seeds. Mix until blended. Add to turkey mixture. Mix until lightly blended.

3. To assemble: Slice open pita bread halves to form pockets. Place in a lettuce leaf. Top with a #8 scoop (½ cup) of apple turkey salad.
