School brings in local chef to prepare sushi lunch

The invitation was part of an effort to expose students to different foods.

In an effort to expose students to different foods, Shaler Area High School in Shaler, Pa., invited a local chef to prepare sushi for school lunch, school newspaper The Oracle reports.

The district’s foodservice director, Francine Schmid, said that the school is looking to bring in a chef once a month to prepare meals for students as part of their meal plan.

“We want to give people a new flavor profile, and what better way to do that then bring it to you,” Schmid told The Oracle. “We want [students] to be able to try something new in school.”

Reffert, who has owned three restaurants in Pittsburgh during his 28-plus years in the food industry, now travels to schools teaching cafeteria staff how to make sushi. In the future, he hopes to introduce other global foods to students, such as spicy noodles and fried rice.
