Portland Public Schools in Portland, Maine, will be switching its daily alternative vegetarian meal to a hot vegan entree next year, Central Maine reports.
The switch was announced after two students wrote to the district’s foodservice director asking for better vegetarian options during lunch. In response, the foodservice team decided to take it a step further and began testing vegan options.
Plant-based menu items such as pasta and vegetarian bean chili will be introduced to the menu next year, and other dishes such as Mediterranean hummus pizza, Kung Pao tofu, orange tofu and carrot hot dogs are also being considered.
