Alden Caldwell, a top adviser to Jamie Oliver when he attempted to reform school foodservice in Huntington, WV, a couple years ago, has seen some success in running his own school foodservice program in Concord, MA, reports the Boston Globe. Caldwell has just completed his first year with Concord schools and Concord-Carlisle High School, producing a 10% sales increase at the high school and four percent elsewhere by making scratch-cooked items like pork tacos, baked falafel puffs, pasta primavera, vegetarian chili, enchiladas, chicken Caesar wraps and chicken quesadillas.
