Geraci to Head Memphis Schools Foodservice

Memphis City Schools has named Tony Geraci its new director of foodservices, reports the Memphis Commercial Appeal. Geraci was the subject of a cover profile story as the Innovator of the Month in Food Management magazine's November 2009 issue.

As head of nutrition services for Baltimore Schools, Geraci introduced a series of innovations, such as running a working farm where district students could go to learn about where food comes from. He also greatly expanded the use of fresh and locally sourced ingredients in Baltimore Schools' foodservice operation and upgraded the meal production system to produce more scratch cooked dishes.

In Memphis, he plans to reinstate scratch cooking in the district's eight-year-old central kitchen and ink contracts with local growers to supply the district with fresh ingredients.
